INGREDIENTS

COMPOSITION

  1. Sable vanilla (Tegral Satin Crème Cake)
  2. Filling Raspberry (Raspberry seed jam)
  3. Red spray (Cocoa butter, Belcolade selection lait)
  4. Mousse Milk chocolate (Belcolade Selection Lait, Chantypak)

WORKING METHOD

Vanilla Sable Dough
  1. Mix all ingredients together (sanded) until form a smooth dough

Red Spray
  1. Melt all ingredients together
  2. Mix well, strain and use at 45C
  3. Bake 190C

Mousse Milk Chocolate
  1. Warm cream at 65C
  2. Add gelatin
  3. Incorporate into melted chocolate
  4. When mix at 40C, add whipped cream
  5. Pour in silicon mold
  6. Freeze
