Working Method

Cinnamon Crumble
  • Mix all ingredients together in mixing bowl.
  • Finish to mix and “Sable” the dough by hands.
  • Keep crumble in refrigerator for 1 hour.
  • Pour in baking tray
  • Bake 160⁰c in ventilated oven for 12m
  • After baking work the crumble with scraper to powder it. 

”60 Days” Cremeux
  • Make the crème anglaise and pour it into chocolates, mix with hand mixer until smooth.
  • When temperature is 38⁰c incorporate soft pick whipping creams.

Caramelized apple
  • Peel and cut apples in cube, cook a caramel and stop cooking with butter and vanilla seed, sauteed apple cube, add ginger grated. Cook apples
  • After baking pour apples in silicone mold, freeze. 

Vanilla Cream
  • Whipped creams with vanilla seeds at soft pick.
