"Financier" Berry


Working Method

  • In pan, cook butter until butter become hazelnut color, strain it keep it aside.
  • In mixing bowl mix Icing sugar, Almond powder, Tg Satin vanilla, mix slow speed.
  • Add egg white and hazelnut butter (cold), mix well.
  • Keep mixture in fridge for 1 hour.
  • Pipe mixture to silicone mold.
  • Bake 180⁰c 15mm

Berry jelly
  • In pan, cook raspberry and strawberry purees with sugar.
  • Add gelatin mass, mix well,
  • Stop cooking, keep aside until cold.
  • Add lemon juice, and mint.
  • Pipe into silicon mold, freeze. 

Vanilla Cream
  • Whipped creams with vanilla seeds at soft pick.
  • Make a custard cream with strawberry puree and Cremivit classic.
  • Mix whipped cream into custard.
  • Make a light cream
