Working Method

Short crust chocolate
  • Mix all ingredients together in mixing bowl.
  • Finish to mix and “Sable” the dough by hands.
  • Keep crumble in refrigerator for 1 hour.
  • Pour in baking tray
  • Bake 160⁰c in ventilated oven for 12m

”Coverlux dark” Cremeux
  • Make the crème anglaise and pour it into chocolates, mix with hand mixer until smooth.
  • When temperature is 38⁰c incorporate soft pick whipping creams.

Chocolate cream
  • Whipped creams with Coverlux at soft pick.
