Panettone is a Christmas cupola shape cake that contains dried raisins and candied fruit. History says that to celebrate Christmas, Ludovico il Moro, the Duke of Milan, invited all the town’s nobility to a sumptuous banquet in his castle. But to his immense despair, the chef saw that the dessert, which had been prepared with the greatest care, was burnt… A boy called Toni, who was an apprentice cook and in love with the chef’s daughter, came forward and said that he had prepared for himself and the servants of the castle, a dessert containing dried raisins and candied fruit. He gave it to the chef and this was how the “Pane di Toni” arrived at the Duke’s table. Everyone found the “Pane di Toni” delicious and since then the Milanese have always celebrated Christmas with “Panettone”. Later, in 1821, Panettone became a symbol of liberty when red candied cherries and coloured citron replaced the raisins and lemon peel to create the red, white and green of the Italian flag. Today, Panettone has become very popular in the South American countries, probably due to the numerous Italian immigrants.
